Sorry for being MIA. Samantha, my daughter came home on Sunday. She needed to go to Memphis for work, so Kathy, my sister in law and I decided to tag along:)
Today Comprehensive Care Pharmacy Team members each made a dish for one of our customers who has been ill. She is always bringing them food. They wanted to return the kind gesture and fill her freezer with some meals. I made Italian Beef. This recipe came out of the All Saints Academy, After Grace cookbook. Joyce submitted the recipe and it has been a favorite of ours.
Italian Beef
- 3 or 4 Chuck roasts
- 1 can beer
- 1 jar peppercini’s with liquid
- 1 can beef consomme soup
- 1 can french onion soup
- garlic powder to taste
- 1 package Italian seasoning
Put chuck roast into a large roasting pan. Add all the other ingredients and cover. Bake in a 300F oven for 4 – 5 hours. It is done when you can separate the meat with 2 forks. Separate meat, Remove bone and fatty parts. Serve on rolls.

Put all ingredients into a crock pot or in a roasting pan and cook for 4 - 5 hours. I find using the crockpot is the easiest. So easy! Do not worry...adding those peppers will not make it hot.
We usually put it on a hard roll along with a little juice and a slice of provolone.Yum!
I loved Memphis and ready to go back. I was fortunate to be able to meet up with 2 of my cousins. It was great to see them. While in Memphis one of our highlights was seeing Graceland. We really were thinking that we would not like it…it was the opposite. It was very interesting. Here are a few photos.
They had videos all through out the tour. It brought back a lot of memories. We stood there and watch this video..we did not move until it was over. Kathy looked at me and said I have goose bumps…so did I. It was his Hawaii concert. It was televised. I remember watching it on TV. Here is the video… Elvis
We also toured his airplanes and car museum. Very Interesting. I would recommend going if you are ever in Memphis.
Elvis had a twin brother. I believe he passed away at birth. We were talking…what would it have been like… if he lived?
