Queso Fundido


We decided to make some guacamole and Queso Fundido for supper tonight. I clipped this recipe out of a magazine. It was in an advertisement for Cacique products. Queso Fundido

Queso Fundido

  • 5 – 6 ozs. chorizo (pork or beef)
  • 1/2 cup poblano pepper, seeded and sliced into strips
  • 1/2 cup white onion, sliced into strips
  • 1/2 cup tequila
  • 1  (10 oz) Queso Quesadilla Monterey Jack cheese, shredded
  • 1/4 cup finely chopped tomato
  • 1 tbsp. chopped fresh cilantro

Preheat oven to 350 F. In a skillet, cook chorizo until almost done, drain well. Add the poblano and onions and cook until tender. Completely remove pan from heat. Carefully add tequila. Return to heat and simmer, uncovered until most of the tequila has dissipated. In a medium casserole or glass dish stir the cheese with the chorizo mixture. Bake uncovered about 10 to 15 minutes or until cheese is melted through and slightly golden brown on top. Sprinkle with tomato and cilantro. Serve with tortilla chips or tortillas.

If you double recipe, do not double the tequila. Continue to use only a 1/2 cup.


Ingredient Line Up!

Slice onions and pepper. Dice tomatoes and cilantro. (Look Reagan...I used it 😉 )


Cook Chorizo. Not sure how to decide if it is almost done...it is a really red color.


Add pepper and onions.

Remove Pan from heat and carefully add Tequila and return to heat and simmer until Tequila dissipates.

All ready to add to the cheese.

In the oven baking.

Queso Fundido

Since I LOVE Poblanos, I used more of them. I also used more tomato and cilantro.Yum!
