Bow Ties with Sausage, Tomatoes and Cream

I found this recipe in my new cook book I purchased in Nashville, Tables of Content by The Junior League of Birmingham, Alabama. I searched the recipe on the internet and found it at several website with great reviews.

Bow Ties with Sausage, Tomatoes and Cream

    • 1 (12 ounce) packages bow tie Pennette pasta, cooked and drained
    • 2 tablespoon olive oil
    • 1 1/2 lb sweet Italian Sausage
    • 1/4 1/4 – 1/2 teaspoon red pepper flakes (depends how spicy you like it…I did 1/2)
    • 1 cup onion, diced
    • 3 5  garlic cloves, minced
    • 1 (28 ounce) cans Italian-style plum tomatoes, drained and coarsely chopped
    • 1 1/2 cups heavy cream
    • 1/2 teaspoon salt
    • 3 tablespoons minced fresh parsley
  1. Heat oil in a large, deep skillet over medium heat.
  2. Cook sausage and pepper flakes until sausage is heated and browning around the edges.
  3. Stir in onion and garlic, and cook until onion is tender.
  4. Stir in tomatoes, cream, and salt.
  5. Simmer until mixture thickens, 8 to 10 minutes.
  6. Stir cooked pasta into sauce, and heat through.
  7. Sprinkle with parsley.

Brown sausage.

Mince onion and garlic

This is where I messed up on the directions, but it turned out fine. After browning sausage I drained it on a paper towel. sautéed the onions and red pepper; then added garlic for a few minutes.

Then I read the directions more carefully...and added the sausage. Actually, I think maybe draining it on paper towel got rid of some of the grease.

Add cream, tomatoes and salt and simmer.

It calls for Bow Tie pasta. I did not have any on hand, so I used Pennette, which is small Penne. Mark and Grace thought they would have liked it better with the bow tie pasta.

Pour sauce on top of pasta and sprinkle with parmesan cheese. Yum!

This was a super easy dish. The sauce was very good!
