Feta Chicken

Standard

This is one of our family favorites. It is very easy to make and you can adjust the seasoning to what you like. I will give suggestions at the end.

  • However many skinless, boneless chicken breast halves you want
    dry breadcrumbs
  • Crumbled Feta Cheese
  • Dried Herb seasoning mix
  • 2 Tblsp butter, melted

Preheat oven to 400° F.

Pound chicken breast to 1/4-inch thickness. Rinse under water and shake off excess.
Dredge in breadcrumbs.  Spoon some feta onto each piece of chicken, along with a sprinkle of seasonings. Fold breast in half. Place folded chicken in a baking dish(sprayed with pam) and drizzle melted butter over.

Bake, uncovered at 400 degrees F for 25 minutes or until chicken is done.

You can see I used a Italian seasoning blend called Tuscan Sunset. It is a combination of basil, garlic, peppers, oregano, fennel and thyme.

Rinse breasts.

Dredge in bread crumbs and place in baking dish, folded in half.

Place feta cheese inside of fold.

 

Sprinkle with seasoning and red pepper flakes.

 

Drizzle with butter.

Ready to pop into the oven and bake until done.

Feta Chicken! You could use a toothpick to keep it closed, but I do not find it necessary.

I have always used the fine bread crumbs. I thought I would use the panko crumbs. I decided to do a mixture of both. Either way it is still yummy.You could use the Italian seasoned bread crumbs and not so much of the seasoning inside.

Feta Cheese – they make seasoned feta crumbles. You could use that instead adding the seasonings (or you may just want to add a bit more seasoning to it)

Seasonings ~ you could use fresh herbs if you would like. I like adding  red pepper flakes because we like a little heat. You could just sprinkle a mixture of what ever seasonings you have if you do not have a blend.

Sundried tomatoes is also a great addition to this recipe.
