This is one of our family favorites. It is very easy to make and you can adjust the seasoning to what you like. I will give suggestions at the end.
- However many skinless, boneless chicken breast halves you want
- Crumbled Feta Cheese
- Dried Herb seasoning mix
- 2 Tblsp butter, melted
Preheat oven to 400° F.
Pound chicken breast to 1/4-inch thickness. Rinse under water and shake off excess.
Dredge in breadcrumbs. Spoon some feta onto each piece of chicken, along with a sprinkle of seasonings. Fold breast in half. Place folded chicken in a baking dish(sprayed with pam) and drizzle melted butter over.
Bake, uncovered at 400 degrees F for 25 minutes or until chicken is done.
You can see I used a Italian seasoning blend called Tuscan Sunset. It is a combination of basil, garlic, peppers, oregano, fennel and thyme.
I have always used the fine bread crumbs. I thought I would use the panko crumbs. I decided to do a mixture of both. Either way it is still yummy. You could use the Italian seasoned bread crumbs and not so much of the seasoning inside.
Feta Cheese – they make seasoned feta crumbles. You could use that instead adding the seasonings (or you may just want to add a bit more seasoning to it)
Seasonings ~ you could use fresh herbs if you would like. I like adding red pepper flakes because we like a little heat. You could just sprinkle a mixture of what ever seasonings you have if you do not have a blend.
Sundried tomatoes is also a great addition to this recipe.
